  • Ownership engaged Greenbriar in March of 2023 in structuring and leading all aspects of the business, from operations to executive management. After a successful year-long engagement, Greenbriar acquired the Roost brand and its operating entities with plans to significantly expand the brand throughout Texas and beyond.

  • Greenbriar is currently in a consulting engagement with the ownership of Haystack Burgers & Barley with the objective of recapitalizing the business, streamlining operations, and optimizing operating cost structure. Upon developing and implementing the necessary infrastructure across all aspects of the business, the long-term goal is to reignite growth for the brand.

  • Greenbriar partnered with the owner of two existing fast-casual seafood restaurants based in East Texas to explore reidentifying them under a new brand. Primary work has included: brand positioning, brand architecture, creative activation, trademarks, as well as menu recreation and consumer communication. After successfully trademarking all intellectual property and standardizing its operations and business model, Greenbriar is planning to convert the two existing units to the new brand and further develop The Coast Southern Seafood brand throughout Texas.

  • Greenbriar has owned and operated four Rusty Taco restaurants in the DFW market since 2013, beginning with the Denton, TX location. As a successful franchisee, we understand the dynamics of the franchisee-to-franchisor relationship and have over a decade of proven success operating under a franchise model.
